BBQ Meat Loaf

This meat loaf gets its great flavor from barbecue sauce and Colby Jack cheese. Talk about "clash of the titans" with these two combinations of flavor...yesss!

Ingredients

  • 2 pounds lean ground beef—-substitutions

  • 2 eggs, lightly beaten

  • 1/2 cup milk

  • 1/4 cup dry bread crumbs

  • 1 package McCormick┬« Meat Loaf Seasoning Mix

  • 1/2 cup barbecue sauce

  • 1/2 cup shredded Colby Jack cheese

Directions

  1. Prep Time: 10 minutes

  2. Cook Time: 1 hour

  3. Preheat oven to 375┬░F.

  4. Mix all ingredients, except barbecue sauce and cheese, in large bowl until well blended.

  5. Shape meat mixture into a loaf.

  6. Place in foil-lined baking pan or 9x5-inch loaf pan.

  7. Top with barbecue sauce.

  8. Bake 55 minutes.

  9. Sprinkle with cheese.

  10. Bake 5 minutes longer or until cooked through.

This is just not fair…I have always had a weakness for meatloaf since I was a boy growing up in Southwestern Florida on the Gulf. It was this dish that my mother used to make during some pretty scary storms and until our power went out or not? Either way, it brings me back to her love of food!!! jefff
